Instructions to make Shahi Aloo:
- Boil the potatoes and fry them.
- Grind the tomatoes, soaked cashews and melon seeds together
- In a pan add a drop of ghee and then add the tomato cashew mixture.
- Let the paste release oil then add coriander, red chilli powder and turmeric according to taste.
- Let the spices mix well then add malai
- Then add milk.
- Then add fried potatoes.
- Then add fennel powder and garam masala.
- Simmer it for 5-7 minutes.
- Now add fresh malai again and turn off the flame.
- Serve it with Naan, paratha and kulchas.
- Garnish it with coriander leaves and Green Chillies.
