- Get 1 small red pepper

- Chop all the vegetables and the bread, and put into a bowl. Season well with salt and pepper, olive oil and the vinegar and leave to marinade for at least 30 minutes (the more the better though!)
- Put everything into a blender and whiz until smooth. Then adjust consistency and seasoning to your liking and chill in the fridge.
- Serve really cold with a few slices of chorizo (or without if you want it veggie!) and 2 leaves of basil.
