Mix cooked vegetables, meat, lentils, bread crumbs, egg, and stock until combined. Grease baking dish or spray with cooking spray. Optional: if topping with a sauce, like tomato or BBQ sauce, it can be added now. Plus, the leftovers make for great vegan meatloaf sandwiches!

- Preheat oven to 180℃. Line a loaf tin with baking paper.
- All vegetables need to be finely chopped OR minced. The easiest method is process them using a food processor.
