The ingredients needed to make Rajma Masala:
- Take 1 Cup Chitra Rajma/ Kidney Beans
- Make ready 3 Medium Size or 6 Small Size Tomatoes
- Prepare 1 Onion
- Take 3 Green Chillies
- Take 1 Inch Ginger
- Get 4-5 Garlic Cloves/ Lassan
- Prepare 1 Table Spoon Ginger Garlic Paste
- Make ready 2 Table Spoon Desi Ghee
- Get 20-30 gms Butter
- Take as required Some Dhaniya Leaves
- Get 2-3 Cups Water
- Prepare 1 Tea Spoon Jeera
- Prepare 1 Pinch Hing
- Make ready Khade Masale/ Dry Spices
- Make ready 1 Tej Patta/ Bay Leaf
- Take 1 Big Elaichi/ Big Cardamom
- Get 3-4 Laung/ Cloves
- Make ready 1 Small Daal Chinni
- Prepare Powdered Spices
- Make ready 2 Tea Spoon Salt
- Get 1/4 Tea Spoon Haldi Powder
- Prepare 1 Tea Spoon Dhaniya Powder
- Take 1/2 Tea Spoon Amchoor Powder
- Take 3/4 Tea Spoon Laal Mirch Powder
- Prepare 1/2 Tea Spoon Kashmiri Laal Mirch Powder
- Prepare 1 Tea Spoon Garam Masala
- Make ready 1/2 Tea Spoon Roasted Jeera Powder
- Prepare 1 Tea Spoon Roasted Kasuri Methi
Steps to make Rajma Masala:
- Wash Rajma properly, then soak them in water for 6-8 hours or overnight or soak them in Boiling water for 1 Hour.
- Chop Onion & Dhaniya Leaves very finely & grind Tomatoes, Green Chillies, Ginger & Garlic finely into purée in a mixer grinder.
- After 6-8 hours/ overnight/ 1 Hour, take a pressure cooker, add Soaked Rajma in it with all khade Masale, 1 Teaspoon Salt & 2-3 Cups Water.
- Now remember, if level of water will be low in Rajma it’s skin will get tear & Rajma will break, so level of water should be high in pressure cooker.
- Then close the lid, give 1 Whistle on high flame after that turn the gas on low flame & give 6-8 whistles/ cook them for 15-20 minutes.
- After 6-8 whistles, turn off the gas & let the pressure cooker depressurise naturally.
- Meanwhile, take a Kadhai or Pan, add 2 Table Spoon Desi Ghee in it & keep the gas on medium flame.
- When ghee gets heated up, add 1 Teaspoon Jeera, 1 Pinch Hing & let them sizzle.
- When they start sizzling, add finely chopped onion in it & roast them till they are golden brown in colour.
- When they are 60-80% roasted, add some water to make them into a paste.
- Then add 1/4 Teaspoon Haldi Powder & roast it for 10 seconds.
- Now add finely grinded tomato purée in it with 1 Teaspoon Salt, mix them properly & cook them for 5-6 minutes till they start releasing oil.
- After 5-6 minutes, when they start releasing oil, add 1 Teaspoon Dhaniya Powder, 3/4 Teaspoon Laal Mirch Powder, 1/2 Teaspoon Amchoor Powder & cook them for 2-3 minutes.
- After 2-3 minutes, add some water to make them into a paste.
- When pressure cooker depressurise naturally, open the lid & add masala mixture in it & mix it properly.
- Then add 1 Teaspoon Garam Masala, 1/2 Teaspoon Roasted Jeera Powder, 1 Teaspoon Roasted Kasuri Methi, Chopped Dhaniya Leaves & 20-30gms Butter & mix them properly,
- Now again close the lid & give 1 whistle on medium flame.
- After 1 whistle turn off the flame & let the pressure cooker depressurise naturally.
- After some time open the lid & your Rajma Masala are ready to be served.
