Instructions to make Mughlai Gobi Ki Sabzi:
  1. Wash Gobi properly, the cut it into medium-small size florets.
  2. Wash Aloo also properly, peel off its skin & cut in to medium-small size pieces.
  3. Chop Onions into slices.
  4. Grind Tomatoes, Green Chillies, Ginger Garlic Paste finely into purée in a mixer grinder.
  5. Now take a kadhai, add oil in it & keep the gas on medium flame.
  6. When oil gets heated up, add slices onions in it & fry them till they are golden brown in colour.
  7. When they start changing colour into golden brown in colour, turn off the gas & take them out in a plate because after taking them out their colour will change quickly as there is over cooking properties in onions.
  8. Now let them cool down for some time
  9. Meanwhile, take a big pot, add 1 Litre water in it with 1 Tea Spoon Salt, keep the gas on medium flame & let it boil.
  10. When water starts boiling, add aloo pieces & Gobi florets in it & boil them for 10-15 minutes till they become soft.
  11. After some time, when onions cool down properly, grind them finely into paste or barista in a mixer grinder.
  12. Now after 10-15 minutes, when Gobi & aloo becomes soft, turn off the gas, drain out all the water from pot & take them out in a plate.
  13. Now take a kadhai, add 1/2 Big Spoon Oil in it & keep the gas on medium flame.
  14. When oil gets heated up, add Khade Masale in it & let them sizzle.
  15. When they starts sizzling, add finely grinded tomato purée in it with 1 Tea Spoon Salt so that they start releasing oil quickly.
  16. After 5-6 minutes, when oil is completely released, add spices mix with 1/4 Cup Dahi & start stirring them immediately so that dahi doesn’t get burned.
  17. Roast them for 2-3 minutes, then add onions barista in it & mix them properly & cook them for 4-5 minutes.
  18. After 4-5 minutes, add Boiled aloo & Gobi pieces in it & mix them properly.
  19. Now turn the gas on low flame, close the lid & cook them for 2-3 minutes.
  20. After 2-3 minutes, open the lid, add 1 Tea Spoon Garam Masala, 1 Tea Spoon Roasted Kasuri Methi & mix them properly.
  21. Your Mughlai Gobi Ki Sabzi is ready to be served.
