Instructions to make Veg Kolhapuri:
- Heat a pan and on a low flame dry roast the spices cinnamon, cloves, black peppers, coriander, cumin, stone flower, pinch of nutmeg powder,bay leaf,red chilies, green cardamoms and black cardamom seeds
- Once the spices become fragrant, then add poppy seeds, sesame seeds and desicated coconut.
- Stir continuously and dry roast till the desiccated coconut gets golden keep aside to cool
- Once the spice mixture cools, then take them in a mixer jar and make fine powder of this
- Now peel and cut the veggies in thick strips batons or optional size
- Prepare a steamer and place them and steamed not too over cook other break the pieces
- Heat oil in a pan and add chopped onions. Saute the onions till they are light golden
- Now add ginger and garlic paste and stir - till the raw aroma of the ginger and garlic goes away.
- Now add chopped tomatoes and saute the tomatoes till soften and seems oil on vessels sides.
- Add turmeric powder, red chilli powder and asafoetida and stir
- Add chopped bell pepper and baby corn and stir till it half cook on a low flame.
- Now add the ground kolhapuri masala powder,stir and saute for few seconds.Then add salt and water and left to simmer
- When oil seen on top then add the steamed veggies.
- Stir and simmer veg kolhapuri gravy for about 2 minutes.
- Finally add chopped coriander leaves - Now Veg Kolhapuri is ready to serve
- Garnish with fresh coriander leaves,onion rings and some chopped red chilli
- Serve veg kolhapuri hot for more taste with parathas,puri chapatis, phulkas.
