  1. Dry roast all ingredients of dry masala in a pan until it becomes aromatic.
  2. Switch off the gas and let it cool down completely.
  3. Grind all roasted masala into a smooth powder. Keep aside.
  4. Rinse and cut all the vegetables lengthwise. Boil all vegetables in the salted water. All vegetables should be crunchy.
  5. Heat the oil in a pan. Add finely chopped onion and sauté till it becomes golden brown. Add ginger garlic paste and sauté for a minute.
  6. Add tomato and sauté until it becomes soft and mushy. Add capsicum sauté slightly.
  7. Add turmeric powder, prepared masala and salt. Sauté till the oil separates from masala.
  8. Add all boiled vegetables. Stain off the water completely.
  9. Mix well. Add 1/2 cup water. Mix well. Cover and cook for 10 minutes.
  10. Veg Kolhapuri is ready to serve. Serve with butter naan or tandoori roti.
