Steps to make Tawa pulao:
  1. Soak the rice minimum 1 hour, it can be changed as per quality of rice.
  2. In a pan add ghee or oil add cumin seeds and coriander powder and saute for 1 - 2 minute. Add 1 dry red chilli.
  3. Add chopped onion, ginger garlic paste with slit green chilli and saute them so that this stuff is not burnt.
  4. Cut all the veggies in almost same shape so that they cooked evenly. Different shape lead to uneven cooking.
  5. In a pan boil the rice with a tablespoon of oil, bay leaf and salt.
  6. When rice are semi. Boiled add few drops of lemon juice so that they are not mashy,. Strain the rice and put cold water. This step helps in non sticky rice.
  7. After onion are semi cooked add all the veggies let them cook, for faster cooking add a pinch of salt.
  8. In another pan take 1/4th cumin, coriander seed, 1 bay leaf, 1 red chilli, cardamom (both) dry roast them. After that grind them and make powder.
  9. Add half red chilli powder, turmeric, salt (as per taste), 1/4 coriander powder, garam Masala, salt, black pepper, 1 dry kashmiri chilli powder and 1 tablespoon of dry roast spices. Add little bit water and cover it with lead.
  10. After all veggies are cooked with spice, add boiled rice. Mix them properly so that veggies and spices coated to rice very well. Cover with lead and cooked for 4-5 minute.
  11. Open the lid again mix them. Put some drops of lemon and garnish with green coriander leaves
  12. Serve with cold raita or dahi.
