It's a total comfort meal in a bowl. A smoked sausage would be great as well. Chicken broth - low sodium or no sodium added. Feel free to replace this with beef broth or vegetable broth.
Steps to make Sausage, Beef, and Beans:
- Preheat oven to 400 degrees Fahrenheit. Peel and dice the aubergine add a little bit of salt to it and let sit for 10 minutes.
- Brown the beef and sausage. Add the onion and celery to the meat as it browns. Drain and lightly rinse the aubergine.
- When the beef and sausage and mix is simmering add the aubergine.
- Mix all the beans, peas broth and mixed vegetables.
- Pour the all the spices in with the meat and aubergine.
- Add the rice stir
- Add beans pea mixture to the rice and meat mixture
- Stir well bring to a boil. Add the breadcrumbs stir in well and put into the oven for 30 minutes covered.
- Take out of oven and let rest 10 minutes covered.
