I have never thought of making Instant upma mix & Podi recipes at home until Sendhil travelled to Norway for an official trip last year. Usually he used to take store bought instant noodles, ready to eat upma mix, pongal mix, paruppu podi/Dal powder, Vathakuzhambu paste from Sakthi masala.

- Method to prepare upma ready mix: take a pan, add ghee. Keep on gas, switch on the flame. Once ghee is hot, turn the switch to low flame.Fry the cashew nuts and keep aside. Now on the same pan, add mustard seeds, chana dal, urad dal and saute for few seconds. Now add curry leaves and saute for few seconds. Now add rawa and roast it on low flame. Add fried cashew nuts and mix well. Now add salt and mix well.
- Switch off the flame. Keep aside to cool down completely. Transfer to airtight container. Keep for future use. It will stay for 20-25 days if kept in room temperature. To keep it fresh for longer time, store it in refrigerator.
- Method to prepare instant upma: heat a pan. Add 2 cup of water to boil. Once boiled up, turn the flame to low.
- Add chopped onion, green chillies, coriander leaves. Now add 1 cup of ready mix and mix well. Add sugar. Now stir it to mix everything well. Once the upma dries up, switch off the flame, serve. Delicious upma is ready in just 5 minutes.
