Instructions to make Balushahi:
- Take two bowl of refined flour,add baking powder, a pinch of salt and mix it well,then add oil to it and mix it properly.Add water and make the dough just to bind.
- To make it more soft and full of layers, just make a big flat round then cut in to four,collect all the four pieces and again make it flat,do the same exercise again two three time more then make small twenty round balls and press your finger at centre to make it deep.
- Heat the oil in kadai, put enough oil to deep fry all the Balushahi in one go at low flame, it will take 4 to 5 minutes to cook it into golden brown. Keep it aside for cooling down.
- Meanwhile we will make chaashni, put two bowl of sugar and same quantity of water in a pan and keep it for boiling, cook it for 8 to 10 minutes, add green cardamom powder,saffron flakes, stir it continuously and when it is ready,add few drops of lemon so that it will not form crystals.
- Let chaashni gets cool down a little bit, then add all Balushahi dip into chaashni for some time for three-four minutes to absorb the syrup.
- Your Balushahi is ready, you can serve it hot or you can also store it in an airtight container.
