  6. Get Oil (whatever kind you have on hand)

Pour hot vinegar mixture over squash mixture. It's early spring and there are green beans, squash and radish that are already ready to harvest! We had an early spring this year, so that means an early. If you're like me, I wouldn't mind having some variation of stir-fry on a weekly basis.

Steps to make Squash and Green Beans:
  1. Cut up squash and green beans to whatever size you prefer (bigger chunks cook more slowly).
  2. Chop up garlic. I like mine minced so I eat it with the veggies without it being obvious in my mouth.
  3. Put some oil in pan and throw the garlic in so as the oil heats up, it brings out the garlic smell.
  4. I also added the cumin to the garlic/oil mix, but you can also add it later with the salt.
  5. When the garlic is sizzling in the oil, put in squash and green beans. If it looks too dry, add some water and put on the lid so it'll cook and steam at the same time.
  6. Open lid and stir from time to time. Also feel free to taste test the doneness.
  7. When it looks almost done, add salt and cumin or whatever other spices you like and mix it up.
  8. EAT!

For that, I introduce to you one of my favorite dishes — stir-fry green beans and sesame butternut squash! This is a great side dish or main dish that can also be a good pair with brown.
