- To make the dough combine the flour the hot water and the olive oil and mix them in a bowl. Knead the dough for at least 15 minutes. After clingfilm it and put it in the fridge for at least 2 hours but it can be left there overnight.
- Cut about 5cm thick slices from the dough. Using a pasta machine set by set starting on the largest setting roll the dough until you reach the smallest setting.
- Layer the dough on the top of each other brushing every layer with olive oil. Squeeze all the liquid from the apples using your hand. Before you put the apple filling on the dough, sprinkle some semolina or grounded whole nut on the pastry so it can soak up the liquid from the apple. Roll the pastry and brush the outside with olive oil.
- Bake them for about 40-45 minutes or until golden brown. When it's ready and still hot brush the outside with some sugar water. Serve it with icing sugar.
