Steps to make Crispy potato bhajia:
- Wash, peel and thinly slice your potatoes.
- Pat them dry on kitchen towels or let them air dry if you have time. If you use them while wet, the water will make your batter thinner and it will slide off from your potatoes. Alternatively, you can air dry them if you're not pressed with time.
- In a bowl, put gram flour, all purpose flour, salt, turmeric, cumin, chilli and garlic powders then mix together.
- Add water in batches as you mix. Don't put too much water cause the batter will slide off the potatoes and they won't be coated neither should the water be too little, the batter will be thick and the potatoes won't cook through inside.
- Add lemon then your coriander and give it a good mix.
- Heat oil in a pan. Dip slices of potatoes into the batter then into the pan.
- Remove from pan after 3 minutes or so depending on your heat.
- Place them on paper towels to drain excess oil
