  1. Make ready 2 cup chopped fenugreek leaves (methi bhaji)
  2. Make ready 1 cup gram flour (besan)
  3. Prepare 1 cup wheat flour
  4. Prepare 4 tbsp green chillies- ginger-garlic paste (use spicy chillies)
  5. Make ready 4 tbsp sugar
  6. Get 1 tsp turmeric powder
  7. Make ready 2 tsp red chilli powder
  8. Make ready 1 lemon juice
  9. Make ready 5 tbsp oil
  10. Prepare 1 pinch soda bi carb
  11. Prepare to taste Salt
  12. Take Oil for frying

Methi leaves are washed, chopped and mixed with wheat flour, besan and other indian spices to make a dough. Muthia is a healthy gujarati snack, generally made with palak, methi, cabbage or lauki too. A diabetic friendly recipe and also no compromise in taste too. Method: Mix together all the ingredients for the muthia/kababs, to make a smooth dough.

Instructions to make Methi muthiya:
  1. Finely chopped fenugreek leaves. Soak them for 5 mins in a bowl of water add a pinch of salt. Strain and use.
  2. In mixing bowl,add both flours, fenugreek leaves, green chillies ginger and garlic paste, turmeric powder red chilli powder,salt & sugar. Add oil & soda bi carb also., squeeze lemon juice on it.
  3. Bind in soft dough,if needed add water.
  4. Make 40-45 equal size round balls.
  5. Cylindrical roll shape muthiya
  6. Heat oil in frying pan, drop few prepared balls at a time in hot oil.
  7. Deep fry in hot oil on medium flame till golden brown in colour.
  8. Cool and store in airtight container.Use as required in making subzi. They remain fresh for 1 week.
