My knowledge of Gujarati Cuisine was limited to only few varieties like Dhoklas , fafdas, khakras etc before marriage. Preparation Grate cabbage and keep it aside. Mix flour, salt, turmeric, sugar and oil in a into a large bowl or thali. Cabbage Jowar Muthia make a great breakfast, when accompanied by a fruit or a fruit juice.
Steps to make Cabbage muthiyas:
- Wash cabbage leaves..and pat dry. Collect all cabbage leaves and grate them.Add little salt..and keep aside for 5 mins. In mixing bowl add grated cabbage,besan,wheat flour,salt, green chillies ginger paste, turmeric powder red chilli powder and oil.
- Mix all together to make soft dough (if needed add 1 tsp curd/ dahi).Make four portion..Apply oil on your palms,take one portion of mixture,roll into cylinderical rolls. Similarly make other 3 rolls. Place them holes seive.
- Place this seive in steamer cooker..steam cook cabbage muthiyas for 20 mins. Cool and cut into 1/2" pieces.
- Do tempering of oil, mustard seeds, fenugreek seeds, white sesame seeds and curry leaves..pour this tempering on chopped cabbage muthiyas pieces..mix well. Garnish with chopped fresh coriander leaves and grated coconut.
- Serve as hot snack in breakfast or high tea…or as side dish in dinner with khichdi- kadhi.
