  1. For the sauce - - Heat the oil in a wok or frying pan on a high flame. Add the garlic, green chillies and ginger and stir fry over a high flame for a few seconds.
  2. Add chopped vegetables and stir fry them. Don’t over cook otherwise they will loose the crunch - - Add the stock, soya sauce, cornflour slurry, sugar and salt and simmer for a few minutes.
  3. Check the thickness and add more stock if required. It shouldn’t be very thick in consistency as has to be eaten with fried rice. - Finally add chopped spring onions
  4. Vegetable fried rice -Add all ingredients to list - In a saucepan bring water to a boil. Stir in rice. Reduce heat, cover and simmer for 20 minutes.
  5. Heat oil in a large skillet or wok over medium heat. Add onions, bell pepper, garlic and pepper flakes, to taste. Cook 3 minutes, stirring occasionally.
  6. Increase heat to medium-high and stir in cooked rice, green onions. Stir-fry for 1 minute. Add peas and cook 1 minute more. Remove from heat. Add sesame oil and mix well.
