  1. I have cut all the vegetables in medium size. Then keep the okra separate. Now in a frying pan pour oil. Add panch phoron & bay leaves.
  2. Add onions and fry them until gets brown. Then add tomatoes and fry them again for few minutes. Fry the okras in another frying pan in full flame for 5mins. Once they are done keep them in a separate bowl.
  3. Now add rest of the ingredients and cook them very well. First add aubergine & sweet potato in the gravy and cook for 10mins. Then add okras. Now cook for another 10mins. Add some water so that they don’t get burnt.
  4. It can be served with rice or any kind of breads.

Take one bhindi and stuff it with the prepared masala. Make sure to stuff them well with a generous amount of masala. Mix in tomatoes (don't drain them) and garam masala, red chili, turmeric.
