  1. Get 500 gram pumpkin
  2. Take 1 cup cooked rice
  3. Prepare 3 spoon garlic paste
  4. Prepare 1/2 cup leftover ghee's mava
  5. Get 1 cup Besan /gram flour
  6. Make ready 1/2 cup rice flour
  7. Prepare 1/2 cup rava
  8. Prepare 1/4 cup black Millet flour
  9. Prepare 1/4 cup juwar flour(sorghum flour)
  10. Make ready 1/4 cup Wheat flour
  11. Take to taste Salt
  12. Prepare 1/2 spoon red chilli powder
  13. Get 1 spoon cumin powder
  14. Take 1 spoon turmeric powder
  15. Make ready Pinch asafoetida
  16. Get 2 spoon sugar
  17. Prepare 2 spoon oil
  18. Get 1/4 spoon baking powered
  19. Get 1/2 cup curd
  20. Make ready For Tadka
  21. Prepare 2 spoon oil
  22. Prepare 8-9 curry leaves
  23. Take 1 spoon mustard seeds
  24. Make ready 2 spoon sesame seeds
  25. Get For Decoration
  26. Prepare 2-3 green chillies
  27. Take 2 tsp corinader leaves
  28. Make ready 1 cup Tea For serving
Steps to make Pumpkin Muthiya:
  1. Grate pumpkin and keep it aside. Add leftover rice, garlic paste & leftover ghee's mava. Then in a bowl mix wheat flour, besan, semolina, rice flour,black millet flour, juwar flour.
  2. Now add turmeric powder, asafoetida,cumin powder,salt, sugar, chilli powder, baking soda, oil & curd. Mix well all ingredients.Use water if needed.Prepare steamer. Add about an inch of water and let it come to a boil. Then apply some oil on steamer tray with holes in it and grease it well and keep it aside.apply some oil on palms and make cylindrical roll. Arrange on greased tray as shown below.
  3. Steam it for 30-40 minutes. You can check muthia is done by inserting a toothpick or knife in the muthia and it should come out clean.Let it cool, remove it to plate. then cut into slices.Heat the oil in a pan on medium for tempering. Once hot add mustard seeds, curry leaves and sesame seeds. Let them splutter. Then add sliced muthia. Mix gently so they do not break and sauté till you get little brown and slightly crispy around the edges. Turn off the heat.
  4. Decoration with green chilli & coriander. Serve as a steam snack or light & healthy dinner with kechup or chutney or Tea.
