  1. Take 1 cup wheat flour
  2. Take 1/2 cup gram flour
  3. Make ready 2 tsp rava/ soji/ semolina
  4. Make ready 1 tsp red chilli powder
  5. Get 1/2 tsp Coriander powder
  6. Make ready 1/2 tsp turmeric powder
  7. Take To taste salt
  8. Prepare 1/2 lemon juice
  9. Make ready 1 tsp sugar
  10. Get 1 tsp Coriander, sesame n fennel seeds powder
  11. Get 2 tsp oil for moin
  12. Make ready As required water to bind a dough
  13. Get 2 cups water to give steam
  14. Take 1 cup fenugreek leaves
  15. Prepare For tempering
  16. Get 1 tsp cumin seeds
  17. Take 1 tsp sesame seeds
  18. Get 1 tsp mustard seeds
  19. Make ready 8-10 curry leaves
  20. Take 2 tsp oil

Methi leaves are washed, chopped and mixed with wheat flour, besan and other indian spices to make a dough. Muthia is a healthy gujarati snack, generally made with palak, methi, cabbage or lauki too. A diabetic friendly recipe and also no compromise in taste too. Method: Mix together all the ingredients for the muthia/kababs, to make a smooth dough.

Steps to make Methi muthiya:
  1. Take wheat flour, gram flour n semolina and add all the powdered masalas, sugar n lemon juice. Add fenugreek leaves n oil for moin. Mix everything well. Add water gradually to bind a semi hard dough. Keep it for 5 to 10 minutes.
  2. Now, take some portion n roll them in cylindrical shape. Take some water n keep it for boiling. Put the rolls over boiling water and cover it. Let them get steamed for 15 to 20 minutes.
  3. Switch off the flame after 20 minutes. Keep the lid covered for more 10 minutes n then uncover it. Take the rolls out on a plate n cut them in small roundels.
  4. Now heat a pan. Add 2 tsp oil n add sesame, cumin n mustard seeds. Add curry leaves. Let them crackle. Now add muthiyas in it. Cook them for a while
  5. Take them out on plate. Garnish with Coriander leaves.Serve with tea.
