- Get 1 cup mixed veggies of your choice (spinach, green capsicum, red capsicum, onions)
- Prepare 1 garlic clove
- Make ready 1 green chilli
- Get 1 tbsp olive oil
- Get 1 tsp salt
Add the sesame oil to a large frying pan over medium-high heat. Once hot, add the chicken, ginger and garlic and fry until chicken is browned. Add in the zucchini, carrots and beansprouts and continue to stir fry for a couple of minutes. Put the peanut butter, garlic, ginger, chilli, dash of soy and pinch of salt into your hand blender.

Add in the zucchini, carrots and beansprouts and continue to stir fry for a couple of minutes. Put the peanut butter, garlic, ginger, chilli, dash of soy and pinch of salt into your hand blender. Add a squeeze of lemon juice and a bit of water and blend. Taste as you make the sauce and add more lemon juice to taste. Add more water as necessary and keep blending.
