Instructions to make Ghuto:
- First wash and chop all the leafy vegetables.
- Remove seeds of broad beans,pigeon peas and chickpeas.
- Add ginger,chilli and white part of green garlic in mixer.Grind to paste.
- Take 2 cups water in a cooker. - Add the seeds first. - Now add chopped brinjals,sponge gourd and potatoes.
- Then add all leafy vegetables one by one. - Add chopped tomatoes.Also add crushed ginger chilli and garlic paste. - Add the green part of garlic too. - Add salt and close the cooker.Take 3-4 whistles.
- Let the pressure release.The vegetables will be cooked.
- Now with a wooden churning stick(mathani) stir the cooked vegetables.You can also coarsely blend with electric blender.
- Add lemon juice coriander and our ghuto is ready.Serve with bajra rotlas,paratha,ghee jaggery,fried green chillies,garlic chutney buttermilk
