The ingredients needed to make Chilli Con Carne:
  1. Prepare 500 grams minced beef
  2. Make ready 250 grams mushrooms sliced. I used large flat mushrooms but any wil do
  3. Take 2 tbsp olive oil
  4. Prepare 2 tsp chilli flakes
  5. Get 1 large onion finely chopped
  6. Take 3 clove garlic crushed or finely chopped
  7. Make ready 3 bell peppers chopped. I used 1 green, 1 red and 1 orange for colour
  8. Prepare 2 can chopped tomatoes
  9. Take 1 can kidney beans washed and drained
  10. Make ready 375 ml beef stock
  11. Prepare 1 tbsp worcestershire sauce
  12. Take 2 tsp ground cumin
  13. Get 2 tsp cayenne pepper
  14. Make ready 3 tsp chilli powder. I used hot but if you prefer less heat try medium strength
  15. Take 1 tsp coarse ground black pepper
  16. Prepare 2 pinch salt
Instructions to make Chilli Con Carne:
  1. Heat oil in a large pan over a moderate heat.
  2. Add chilli flakes, garlic and onion. Cook until soft stirring occasionally.
  3. Add minced beef and coarse ground black pepper. Cook until beef has browned. Stir occasionally.
  4. Add bell peppers and mushrooms. Cook for about 5 mins. Stir occasionally.
  5. Add tomatoes, kidney beans and beef stock. Simmer for about 5 mins.
  6. Stir in half of the worcestershire sauce and taste. Don't worry if it doesn't taste like chilli as the spices come next.
  7. Now my favourite bit, adding spices and tasting. It is important not to add to much and keep tasting as you add something because you can't take it out when its gone in.
  8. With all you have left over, worcestershire sauce, cumin, chilli powder, cayenne pepper and salt add a quarter of each at a time. Stir in and leave for a minute and taste.
  9. Add more spices if you feel it needs it. Remember a little at a time and taste.
  10. When you feel it needs no more, reduce your chilli if it needs it by gently simmering and stirring occasionally.
  11. Serve with rice, jacket potato, crusty bread or whatever you fancy. Enjoy.
