Making Sandesh: Once the paneer is drained, place on a dry, clean surface and knead the paneer until the paneer is almost rolls into smooth soft dough. (History of Bengali Sandesh). - Mash till its soft. Add to pan and continue to mash and cook to remove moisture. Dont overcook till crumbly it will not hold shape.
- Allow to cool.Knead with hand,add sugar and cardamom powder. Mix well.
- Make into balls, press in the middle and garnish with almonds. You can also use tutti frutti or pistachios for garnish
