- Bring milk to a boil, remove from heat, and add the lemon juice
- Let the milk curdle and you will get what we call “chena” or paneer.
- Separate the paneer from the whey, and wrap in a cheesecloth. Hang it or leave in a colander over a bowl till the whey stops coming out, and it is dry.
- Knead the paneer till it is smooth and most of the grainy texture is gone, then add the sugar and incorporate it into the paneer.
- Add the rose essence and enough red food colouring to turn it pink. You don’t have to make it as pink as I did, my food colouring happened to be a bit strong.
- Mix the food colouring in until the pinkness is uniform.
- Shape into balls or small patties, and chill in the fridge for 1 hour. Serve chilled.
